yeah that’s the thing there’s incredibly few things that you can sous vide as a vegetarian, eggs would be my big one. You can sous vide eggs to mostly cook them ish while preserving their texture so that you can then either salt or sugar-cure the yolks which yields some fun garnish ingredients
